WINE SELECTION

APPETIZER

Pinot Grigio Trentino DOC, Concilio 2005, Italy
Full yellow in colour with a rich nose ranging from bananas and pears to floral aromas of acacia. Dry on the palate, full and fresh, medium in structure with good medium term aging potential.


SEAFOOD
Sauvignon Blanc, Frog's Leap 2006, California
Very clean and crisp, definitely on the grassy end of the flavor spectrum, but there was also a strong element of melon and citrus. This is a very good food wine.


GAME
Graves, Chateau Fort de Roquetaillade, France 2004
Roquetaillade Graves offers notes of citrus and white peach, backed by an acidic, minerally core. The fruit is in perfect balance with the acidity, making for a delightful sipping wine.


ENTRÉE
Pinot Noir, Cartilidge & Brown 2004, Washington
The 2004 vintage displayed lots of the true pinot character: violet, rose petal, cherry and plum fruit with earthly mocha/herbal notes. The remainder of the blend were surprising brawny, with wonderful baked black cherry and fig fruit, mineral and licorice flavors bolstering it.


DESSERT
Sparkling Wine, Domaine Ste. Michelle Luxe, Washington 2000
Luxe is a very delicate Blanc de Blanc sparkling wine crafted in the time honored methode champenoise tradition. It exhibits explosive aromas of toasted almonds and hazelnuts accentuated by delicate citrus, honey and apple top notes. Rich and toasty flavors of vanilla, citrus, ginger an nutmeg saturate the palate and mesh nicely with the wine's smooth texture and lively structure.
