WINE SELECTION

APPETIZER

Fume Blanc, Dry Creek Vineyard, 2004, California
This Fume Blanc exhibits aromas of lemon-lime, grapefruit, melon and lemongrass. Its flavors follow suit with the addition of gooseberry and a subtle note of minerality. The wine’s crisp acidity cleanses the palate and invites an array of foods.

SEAFOOD
Chardonnay, Chateau Ste. Michelle "Ethos" 2004,Washington
The 2004 Ethos shows the delicacy of the Canoe Ridge Estate fruit, but with complexity from the natural fermentation. This Chardonnay exhibits intriguing citrus, floral and mineral notes, which give way to an elegant, refined wine with an easy finish.

GAME
Pinot Noir, Domaine Serene "Yamhill Cuvee" 2005, Oregon
The 2005 Yamhill Cuvee exhibits a highly perfumed nose displaying loads of red cherry, raspberry, dried blueberry, slightly citrus and cola. The palate is ripe and ample. Showing red plum, black raspberry, caramel, clove, vanilla and violet with a supple and well balanced finish.

ENTRÉE
Primitivo, Di Manduria "Sessantanni" 2004, Italy
This wine is produced in the heart of Puglia from very old and low yielding vines. It possesses distinctive fruit flavors that glide along on a dense, muscular structure and fans out into a remarkably rich finish.

DESSERT
Late Harvest Primitivo, Di Manduria DOC "Madrigale" 2005, Italy
Late harvest wine with very high residual sugar content. Wonderfully deep fruit, which displays itself and is not distracted by the sweetness of the wine, as it is counter balanced by lively acidity.
